Recipe Suggestion: Delhi Style Pilau:

500-750g mutton/beef/chicken, cubed
500-750g basmati rice, washed and soaked for 30 minutes
1 tbsp ginger paste
1 tbsp garlic
1/2 onion, sliced
200g plain yogurt
1/2 cup milk
175g ghee
Shan Pilau Biryani Mix

• Mix 1-2 glasses water, Shan Pilau Biryani Mix, meat, garlic and ginger. Cover and boil on a low heat until the meat is tender (ensure about 1 cup of stock remains in the pot).

• Pour the yogurt over the cooked meat.

• Separately, add the soaked rice and salt to taste to 12 glasses of boiling water. Boil the rice until more than half cooked. Remove from the heat and drain thoroughly. Then mix the milk in with the rice.

• Heat the ghee and fry the onion until golden.

• Spread the rice over the meat. Then sprinkle the dry food colour and fried onion over it. Cover and cook on a low heat until the rice is tender. Mix the meat and rice before serving.

Serve with fresh salad and raita.
